- I enjoy the flavor celery provides stocks and soup, but I don't necessarily like biting on them, so I like to add them whole and remove them once they have provided me with its flavor. If you would like to do the same, you are more than welcome to; if not, dice the celery and cook along with the onion as previously instructed.
- You can make this recipe vegan by omitting the bacon and ham. Also, use all water instead of the 2 cups of chicken stock.
- Double the recipe to make a whole (12-16oz) bag of split peas, as this recipe only calls for half the bag.
