Enjoy rich, creamy and luxurious mango ice cream at home following a few simple steps. This mango gelato is full of flavor perfect for a nice Summer treat!

Ingredients

• 1 3/4 cup mango puree (about 2 to 4 ripe mangoes)
• 1/2 lime, juiced
• 1 cup heavy cream
• 1 1/4 milk
• 4 egg yolks, at room temperature
• 1 cup granulated sugar
• pinch of salt

Instructions

1. Place your ice cream machine insert in the freezer overnight.
2. Puree the mangoes and lime juice in a blender until smooth. Then pass the mangoes through a sieve to remove the fiber. Set the puree aside.
3. Add heavy cream and milk to a saucepan and bring to a light boil over medium heat. Meanwhile, In a bowl beat the egg yolks and sugar until pale in color, about 2 minutes.
4. Temper the eggs by adding about 1/4 of the cream mixture into the egg yolks. Whisk to combine. Add the tempered egg mixture back into the saucepan and cook together on medium-low heat until it thickens, stirring constantly.
5. Strain the custard into a large bowl and combine with the mango puree and a pinch of salt. Cover with plastic wrap (make sure the plastic wrap is touching the actual mixture) and refrigerate minimum 6 hours to overnight.
6. Pour the custard into the ice cream maker and freeze it according to your ice cream maker manufacture's instructions.
7. ENJOY right away or freeze for a firmer consistency.
