Creme Brulee Recipe

Creme Brulee Recipe

Creme brulee is a luscious French dessert consisting of a rich custard base topped with a layer of caramelized sugar.
Ingredients
2 1/2 cups heavy whipping cream
5 large egg yolks, room temperature
1/2 cups + 2 tablespoons granulated sugar, more for topping
2 teaspoons vanilla extract
pinch of salt
Berries for topping, optional
Instructions
Preheat oven to 325 degrees F.
Place the cream into a saucepan. Set over medium heat, and bring to a slight boil (just until it starts to boil slightly around the edges). Allow to sit for 5 minutes.
Meanwhile, place the egg yolks and sugar in a medium bowl. Whisk until the egg yolks have lightened in color, then add the salt. Add the cream a little at a time, whisking constantly. Then add the vanilla extract and give it one last stir.
Strain the mixture through a fine-mesh sieve into another bowl.
Fill each ramekin with the custard. Place the ramekins in a pan and fill with hot water until the water comes halfway up the sides of the ramekins (Make sure you don't get water into the custard; otherwise, it won't set properly).
Bake in the preheated oven for 20 to 25 minutes if using a SHALLOW ramekin or 35 to 45 minutes if using a DEEPER ramekin. The custard is done when set around the edges and jiggly in the center (DO NOT OVERBAKE).
Remove the custard from the oven and let it rest at room temperature for about 30 minutes. Cover the ramekins with plastic wrap and chill in the fridge for a MINIMUM of 3 hours (the longer you let it set, the better) or up to 3 days before serving.
Once ready to enjoy, remove from the fridge, sprinkle the top with granulated sugar, and brulee with a kitchen torch.
Top it with berries (optional) and ENJOY!
