Tuscan Style Salmon Pasta Prep time: 10 Min Cook time: 25 Min Total time: 35 Min
This Tuscan-style salmon pasta is incredibly lovely—the perfect combination of light, creamy and flavorful.
Instructions Cook the pasta according to the package instruction. Heat the butter and oil in a skillet over medium-high heat. Season the salmon fillets with dried dill, salt, and pepper to taste. Sear the fillets for about 6 minutes on each side, flesh-side down first. Once cooked, remove from the skillet and set aside. If using skin-on fillets, you can remove the skin once they are cooled enough to handle and cut the salmon into bite-size pieces. Discard any excess oil from the skillet, leaving about 2 tablespoons behind, and cook the onions and garlic over medium heat for about 4 minutes. Add your tomatoes; cook for about 2 more minutes, then pour in the wine and allow the alcohol to evaporate for about 4 minutes. Add in the chicken broth and heavy cream and cook until the sauce has thickened slightly, about 5 minutes. Then add the Parmesan cheese, spinach, and stir to combine. Taste the sauce for seasoning and add salt and pepper if necessary. Add the cooked pasta to the skillet along with the salmon pieces. Coat the pasta in the sauce and finish it with fresh parsley. Serve and ENJOY! Notes: To reheat the pasta, add it to a skillet with a little bit of cream over medium heat. Wait for the pasta to reheat all the way through, stirring to combine.
