This simple and delicious breakfast skillet is an all-in-one. Loaded with potatoes, bacon, cheese, and eggs, it makes for the ultimate breakfast recipe!
Instructions Boil diced potatoes in a pot of water until the potatoes are ALMOST cooked halfway through. Meanwhile, add the bacon to a cold skillet and cook until crispy over medium-low heat. Once the bacon is crispy, without discarding the bacon drippings, stir in onions, garlic, smoked paprika, and cayenne pepper. Mix everything together and cook over medium heat for about 3 minutes or until the onions are translucent. Drain the potatoes and add to the skillet. Season with salt and pepper to taste and cook for 5 minutes, making sure to stir occasionally, so nothing sticks and the potatoes start developing a bit of color. Make four wells in the potatoes and crack the egg into each well. Sprinkle with cheese and season the eggs with salt and pepper, if desired. Cover the skillet and let the eggs cook over low heat until the eggs are cooked to your desired doneness. They will take from 7 to 10 minutes, depending on how runny or cooked you like the eggs. Sprinkle with green onions and ENJOY!
