Pan con Lechon (Cuban Pulled Pork Sandwiches)

Pan con Lechon is a popular Cuban street food sandwich. Made with soft Cuban rolls, pulled roast pork, and raw sliced onions. It sure is a great and delicious way to use leftover roast pork!

Ingredients

• 4 Cuban bread rolls (or baguette rolls)
• 3 - 5 cups pulled pork
• 1 cups sliced onion
• 1/2 cup Pork drippings
• OPTIONAL TOPPINGS:
• Mariquitas chips
• Shoestring fries
• Sliced tomatoes
• Sliced Avocado

Instructions

1. Slice the rolls in half lengthwise. Brush the insides with about 1/2 tablespoons of drippings. Add pork and sliced onions.
2. Add about a tablespoon of drippings to a skillet and toast the bread on medium heat on both sides.
3. Slice and Enjoy!
